  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 1 cup cherry or grape tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced
  • 1/4 cup fresh basil leaves, roughly chopped
  • 1/4 cup balsamic glaze (store-bought or homemade)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a large baking sheet or line it with parchment paper for easier cleanup.
  2. Place the chicken breasts on the prepared baking sheet. Drizzle the chicken with olive oil and season evenly with salt, pepper, and Italian seasoning.
  3. Bake the chicken for 15 minutes.
  4. Remove the pan from the oven. Arrange the halved tomatoes over the top of each chicken breast. Top each breast with slices of fresh mozzarella cheese.
  5. Return the pan to the oven and bake for another 5 to 8 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit and the cheese is melted and bubbly.
  6. Remove the pan from the oven. Immediately sprinkle the fresh basil over the melted cheese.
  7. Drizzle the balsamic glaze over the chicken before serving. Serve this healthy chicken dinner immediately.

Notes

  • To make a quick homemade balsamic glaze, simmer 1/2 cup of balsamic vinegar in a small saucepan over medium-low heat until it reduces by half and coats the back of a spoon, about 10 minutes.
