Make these no-bake Buckeye Graham Crackers by layering creamy peanut butter filling between crunchy graham crackers and dipping them in rich chocolate. This easy recipe delivers the classic flavor of Buckeye candy in a simple, satisfying bar.

  • 1 cup creamy peanut butter
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon shortening or coconut oil (optional, for smoother dipping)

Instructions

  1. Line a baking sheet with parchment paper. Set aside.
  2. In a medium bowl, beat together the softened butter and peanut butter until smooth.
  3. Gradually add the powdered sugar, beating until fully combined and the mixture is thick.
  4. Mix in the vanilla extract and salt.
  5. Take one graham cracker square and spread a generous layer of the peanut butter mixture on top. Place a second graham cracker square on top to form a sandwich. Repeat until all graham crackers are used, creating 12 sandwiches.
  6. Place the sandwiches on the prepared baking sheet. Chill in the refrigerator for 15 minutes to firm up the filling.
  7. While chilling, melt the chocolate chips and shortening (if using) in a microwave-safe bowl in 30-second intervals, stirring well after each interval, until completely smooth.
  8. Dip each chilled graham cracker sandwich into the melted chocolate, ensuring most of the cracker is coated. Leave a small circle of the peanut butter filling exposed at the top, mimicking a traditional buckeye shape.
  9. Place the dipped crackers back onto the parchment-lined sheet.
  10. Refrigerate the finished Buckeye Graham Crackers for at least 30 minutes, or until the chocolate is fully set.
