Make this fresh summer fruit salad featuring sweet peaches, blueberries, salty feta, and crunchy pecans, topped with a bright honey lime dressing.

  • 4 cups mixed greens (like spring mix or baby spinach)
  • 2 ripe peaches, pitted and sliced
  • 1 cup fresh blueberries
  • 4 ounces feta cheese, crumbled
  • 1/2 cup pecans, lightly toasted and candied (optional)
  • For the Vinaigrette:
  • 1/4 cup olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Pinch of salt
  • Freshly ground black pepper to taste

Instructions

  1. Prepare the pecans: If candying, toss pecans with 1 teaspoon of sugar and a tiny splash of water in a dry skillet over medium heat until sugar melts and coats them. Remove and cool.
  2. Whisk the vinaigrette ingredients together in a small bowl: Combine olive oil, lime juice, honey, Dijon mustard, salt, and pepper. Whisk until emulsified.
  3. Assemble the salad base: Place the mixed greens in a large bowl. Arrange the sliced peaches and blueberries over the greens.
  4. Add the cheese and nuts: Sprinkle the crumbled feta cheese and the toasted pecans evenly over the fruit and greens.
  5. Dress the salad: Drizzle the honey lime vinaigrette over the salad just before serving. Toss gently to coat all ingredients lightly.
