2 ripe peaches, pitted and sliced
1 cup fresh blueberries
4 ounces feta cheese, crumbled
1/2 cup pecans, lightly toasted and candied (optional)
For the Vinaigrette:
1/4 cup olive oil
2 tablespoons fresh lime juice
1 tablespoon honey
1 teaspoon Dijon mustard
Pinch of salt

Instructions
Prepare the pecans: If candying, toss pecans with 1 teaspoon of sugar and a tiny splash of water in a dry skillet over medium heat until sugar melts and coats them. Remove and cool.
Whisk the vinaigrette ingredients together in a small bowl: Combine olive oil, lime juice, honey, Dijon mustard, salt, and pepper. Whisk until emulsified.
