Prepare this make-ahead French toast casserole the night before for a stress-free morning. It features juicy blueberries, a rich custard, and a creamy layer, perfect for weekend brunch or holiday gatherings.

  • 1 loaf (16 ounces) thick-cut bread, such as challah or sourdough, cut into 1-inch cubes
  • 2 cups fresh or frozen blueberries
  • 8 ounces cream cheese, softened and cut into small cubes
  • 6 large eggs
  • 2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/4 cup butter, melted (for topping)
  • 1/2 cup all-purpose flour (for topping)
  • 1/4 cup packed light brown sugar (for topping)

Instructions

  1. Grease a 9×13 inch baking dish. Arrange half of the bread cubes evenly in the bottom of the dish. Scatter the blueberries over the bread layer. Place the cream cheese cubes randomly over the blueberries. Top with the remaining bread cubes.
  2. In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, nutmeg, granulated sugar, and 1/4 cup brown sugar until fully combined. Pour the custard mixture evenly over the bread and berries in the baking dish. Gently press down on the bread to help it absorb the liquid.
  3. Cover the dish tightly with plastic wrap. Refrigerate for at least 4 hours, or preferably overnight.
  4. When ready to bake, preheat your oven to 350 degrees Fahrenheit. Remove the plastic wrap.
  5. Prepare the topping: In a small bowl, combine the melted butter, flour, and the remaining 1/4 cup brown sugar until crumbly. Sprinkle this mixture evenly over the top of the casserole.
  6. Bake for 45 to 55 minutes, or until the casserole is puffed, golden brown, and the center is set. If the topping browns too quickly, loosely cover the dish with foil for the last 10 minutes.
  7. Let the casserole rest for 10 minutes before slicing and serving.

Notes

  • For the best make-ahead results, prepare the casserole up to 24 hours in advance.
  • If you prefer a lemon flavor, add 1 tablespoon of fresh lemon zest to the custard mixture.
  • Serve warm with maple syrup or a dusting of powdered sugar.
