Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  3. In a separate medium bowl, whisk the granulated sugar and brown sugar with the eggs until combined. Whisk in the vegetable oil and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix.
  5. Fold in the grated zucchini and any optional mix-ins, like chocolate chips or nuts. Mix only until they are evenly distributed.
