Learn how to make the classic Italian Bellini cocktail using fresh peach puree and chilled Prosecco. This simple, two-ingredient drink is perfect for brunch or any celebration.

Ingredients

Scale
  • 1/2 cup fresh peach puree (from ripe peaches)
  • 1 cup chilled Prosecco or dry sparkling wine

Instructions

  1. Prepare the peach puree. If using fresh peaches, peel, pit, and blend them until smooth. Strain the puree through a fine-mesh sieve to remove any solids for the best texture. Chill the puree completely.
  2. Chill two champagne flutes thoroughly before serving.
  3. Pour 2 tablespoons of cold peach puree into the bottom of each chilled flute.
  4. Slowly top each flute with about 1/4 cup of chilled Prosecco. Pour gently to maintain the bubbles.
  5. Stir lightly once to combine the layers. Serve this easy Champagne cocktail immediately.

Notes

  • For an authentic taste, use high-quality, ripe white peaches.
  • If you prefer a sweeter drink, add a small splash of peach schnapps to the puree before adding the Prosecco.
  • This recipe works well for large batches; mix the puree ahead of time and keep it chilled. Add the sparkling wine just before serving.
  • For a Strawberry Bellini recipe, substitute the peach puree with fresh strawberry puree.
