  • 2 cups cooked, shredded chicken breast
  • 1 large ripe avocado
  • 1/4 cup plain Greek yogurt (optional, for extra creaminess)
  • 2 tablespoons fresh lime juice
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the shredded chicken in a medium bowl.
  2. In a separate small bowl, mash the avocado until mostly smooth. Stir in the Greek yogurt, if using, and the lime juice.
  3. Add the mashed avocado mixture to the shredded chicken. Mix gently until the chicken is evenly coated.
  4. Fold in the chopped celery, red onion, and cilantro.
  5. Season with salt and pepper. Mix well to combine all ingredients.
