Make perfectly crispy zucchini fries in your air fryer. This easy, low-carb side dish uses parmesan cheese for flavor and cooks fast for a guilt-free snack.

  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Wash and trim the ends off the zucchini. Cut each zucchini lengthwise into sticks resembling fries, about 1/4 to 1/2 inch thick.
  2. In a large bowl, toss the zucchini sticks with olive oil until lightly coated.
  3. In a small bowl, mix the Parmesan cheese, garlic powder, salt, and pepper.
  4. Sprinkle the cheese mixture over the zucchini and toss again until the sticks are evenly coated.
  5. Preheat your air fryer to 380°F (195°C).
  6. Place the zucchini fries in a single layer in the air fryer basket. Work in batches if necessary to avoid overcrowding, which prevents crisping.
  7. Air fry for 8 to 12 minutes, shaking the basket halfway through the cooking time, until the zucchini is golden brown and crispy.
  8. Serve immediately as a healthy, low-calorie snack or side dish.

Notes

  • For extra crispiness, you can lightly dust the zucchini with 1 teaspoon of cornstarch before adding the oil and seasoning.
  • If you want a vegan option, omit the Parmesan cheese and add 1/2 teaspoon of nutritional yeast to the seasoning mix.
